
The Simple Storage Routine
A realistic weekly routine for home vegetable storage — what to check, how long it takes, when to adjust, and when to call the season done.
It's November and the storage space is quiet. The carrot bin is in its corner, the cabbage is stacked where you put it in October, and everything looks roughly as it did when you closed up after the last check. The question isn't whether the space is working — it's what you're supposed to actually do now that it's running.
That question is the whole purpose of this guide. A vegetable storage routine isn't a second job. It's a weekly visit — 10 to 15 minutes, the same short sequence each time — and a clear set of decision rules for what to do with what you find. Check weekly for the first four to six weeks while the space is adjusting to new crops and outside temperatures are still shifting. Once conditions have stabilized, every two weeks is possibly enough to stay ahead of problems. If your space has no thermometer or hygrometer, lean toward weekly or even more frequent visits year-round: observation is your only early-warning system without sensors, and frequency is what gives you the best chance of catching a problem before it spreads. Most visits, nothing needs changing. The discipline is showing up to confirm that.

Your Weekly Visit (10–15 Minutes)
Each inspection follows the same short sequence, in the same order. Consistency is part of what makes it work: you're not inventing a new approach each time, you're running the same check and comparing the result against the last visit.
Nebraska Extension recommends periodic inspection and prompt removal of decaying produce as the primary tools for maintaining stored crops. This is how that recommendation becomes a practice.
Step 1: Read the temperature (and humidity if you're measuring it). Note the reading before you touch anything. Compare it against the target range for each crop zone. If you haven't added a thermometer yet, Checking Your Storage covers the point at which one earns its place.
Step 2: Walk each crop zone and scan for five signals. Shriveling, condensation on bins or produce, sprouting, soft spots or off odor, yellowing leaves. You know these from the checking guide. Look for anything that has changed since the last visit or is changing faster than expected.
Step 3: Remove anything soft, off-odor, or clearly deteriorating. Take it out of the storage space entirely — not just to one side. Decaying produce raises the ethylene load in the zone and accelerates deterioration in neighboring items. One item removed promptly protects the rest.
Step 4: Note any zone where more than one or two items have changed since the last visit. A single soft spot is an isolated incident. Three soft spots in the same bin, or the same signal appearing across two bins in the same zone, is a condition pattern worth investigating.
Step 5: Decide — monitor, adjust, or accept. The visit ends with a decision for each zone, not just an observation. The full framework is in the section below.
That's the complete visit. When the space is performing, most visits end at Step 4 with nothing to report. That confirmation — the space is stable — matters as much as finding a problem. Stability means the system is working.
What Normal Seasonal Aging Looks Like
Part of what makes a storage routine sustainable is knowing how to read normal aging without mistaking it for a problem. Crops change across a winter. Most of what you see is expected.
Outer cabbage leaves yellow and loosen gradually. That's protective desiccation — the outer layers absorb and slowly release moisture while the inner head stays firm. As long as the inner leaves are tight and the head is dense, this is normal. You'll peel the outer layers before use anyway.
Garlic and onion skins continue to dry through the storage season. The papery layers at the outermost surface tighten and thin over time. Dry skins are a sign these crops are in appropriate conditions — UMass Extension places garlic and onions at 32°F with 65–70% relative humidity, the kind of conditions that favor continued drying rather than rehydration.
Carrots may soften slightly over a full season. This is gradual moisture loss — a slow change in texture that becomes noticeable by late winter, not a sharp decline. A carrot that's less firm in February than it was in October is still worth eating and still doing its job. The signal to watch for is sudden or accelerating softening, not a slow, even change across the season.
Winter squash skins harden further and may develop deeper color as the season advances. This is continued curing, not deterioration. The interior remains sound as long as the skin shows no soft spots, dimpling, or off odor. Winter squash is cold-sensitive: UMass Extension documents chilling injury below 50°F, with accelerated decay in the flesh as a result. If your squash is sharing a cold zone with root crops, it warrants a dedicated warmer area.
The key distinction across all of these is pace. Slow, gradual change is seasonal aging. Rapid or accelerating change — a crop that was stable at the last visit now showing significant decline — is a condition signal worth investigating before the next one.
Seasonal Adjustments: How the Space Changes
The storage space itself shifts across the winter. A basement corner that holds 38°F reliably in October may behave very differently by January, and the routine needs to shift with it.
October–December
Outside temperatures are dropping and the storage space is cooling with them. For most of the fall, this works in your favor — the space stays within its target range without much intervention. The risk to watch for is the temperature approaching its lower boundary.
University of Maine Cooperative Extension places the safe lower limit for root crop storage at 32°F. Below that, cell damage and accelerated deterioration follow. In an uninsulated or semi-insulated space, this risk first appears as fall deepens into winter. If your thermometer reads consistently below 36°F by November or December, consider reducing ventilation rather than admitting outside air that has now turned too cold.
January–February
This is the coldest period and the highest-risk window for freeze damage. A space that held reliably at 36°F in November may drift toward 32°F during a sustained cold stretch. Root crops are the most vulnerable: carrots and beets show freeze damage as a loss of cellular integrity — soft, watery tissue that does not recover.
Check these crops specifically during mid-winter visits. If temperatures are consistently approaching 32°F, adding insulation at the access point — even a hung blanket or a foam panel across the door — can pull readings back into range. This is also the period when crops that entered storage with handling damage will begin revealing it. A carrot bin that looked sound in October may show its compromised items now.
March–April
Outside temperatures start rising and the storage space rises with them. Crops that held well through February may begin declining faster as the space warms. Sprouting accelerates in potatoes. Carrot texture softens more quickly. Cabbage outer leaves move from gradual yellowing into active breakdown.
This is not a system failure. It is the natural end of the storage window for most root crops — arriving when the season has used up the margin that good setup and careful maintenance created. The routine's job shifts here from protection to triage: what is still worth maintaining, and what has run its course.
Monitor, Adjust, or Accept
Each visit ends with a decision for each crop zone. Three options cover every situation you'll encounter:

Most visits land in Monitor when the space is performing. Adjust applies when a condition is drifting and a clear action is available. Accept is not a failure judgment — it is the recognition that the storage system did its job for as long as the crop was viable.
University of Maine Cooperative Extension puts storage losses from improper handling at 10 to 40 percent of a harvest. The routine exists to keep your season in the lower part of that range — to intervene early when conditions drift, and to extend the useful window as long as it's worth extending.
Knowing When the Season Is Done
At some point in late winter or early spring, the math changes. What remains in storage is small. Conditions are harder to maintain as outside temperatures rise. The crops that held well are approaching the natural end of their storage window regardless of how carefully you manage them.
This is the moment to close out the routine — not because the system failed, but because it succeeded.
More of the harvest came out usable than would have without the setup, the separation, the weekly visits, and the adjustments along the way. A harvest that held through January, February, and into March is a successful storage season. Zero loss is not the goal and has never been the standard in home storage. The goal is meaningful protection of a hard-earned harvest. When what you're protecting no longer justifies the maintenance, the season is done.
